Key point 1 Whole wine and whole chicken are the most fragrant

Stew with whole wine without adding water, the aroma is more intense. The golden ratio of rice wine to chicken is 1:1 (2 catties of chicken: 2 bottles of rice wine), and so on. If you don't like strong wine, you can stew with half wine (see point 4 below).
After chopping the chicken, slice the ginger. It is best to use a whole chicken or a half chicken. If only a few chicken legs are used for stewing, the taste of the chicken soup will be relatively weak.

Key point 2 Stir-fried ginger slices in cold oil

Turn on the fire, put the sesame oil into the pan, put the ginger slices in the cold oil and stir-fry, because the sesame oil is not resistant to high temperature, it will deteriorate and bring out a bitter taste if stir-fried in a hot pan, stir fry for about 2 minutes, and fry until the ginger slices are deep in color and fragrant , avoid frying dry. At this time, add the chicken and stir fry together on high heat.

Key point 3 Chicken is first fried and then stewed

Stir-fry the chicken evenly until it is fragrant, wait until the surface is colored and charred, and then stew the soup. The aroma is full and the color is more beautiful.

Point 3 Turn off the fire and then serve rice wine

Turn off the fire first, add two bottles of rice wine, and then turn on the fire to avoid the side of the pot being caught on fire by the wine gas when the temperature is high. Cook for a while, then add rock sugar to enhance the flavor, turn to high heat, and simmer for about 4 minutes. Do not add salt, it will make the soup taste bitter.

Key 4 half-wine method: boil the wine first and then add water

If you use the [half-wine method], in order to avoid the meat becoming woody, the cooking method: first add 1 bottle of rice wine, cook on high heat, then add water and bring to a boil. It is recommended to add boiling water so as not to affect the cookedness of the chicken.

If you like the taste of strong wine and tender chicken, you can start the pot at this time; if you like the soup to be sweet but the taste of wine is light, you can cook for a while to make the meat softer.
